I'd recommend staying in Punkaiki. Greymouth didn't capture my interest as much as Punkaiki did. It was, for me, a stopover point.
I stayed at the Punkaiki Beach Hostel. Walking toward the pancake rocks from the hostel, I spotted a little place that rents out kayaks. I forget the name of it, but it's a very worthwhile trip to rent out a kayak. The owners will tell you where to put the boat in and will help you do it, and you can decide how long you'd like to go for. The pancake rocks are beautiful, too, and for that you won't need more than twenty minutes, perhaps once in the morning and once in the evening, so that you might see it in various lights.
